What is an Endangered Cocktail?
Endangered Cocktails are alcoholic concoctions that were once widely enjoyed or at least enjoyed in a particular city or region, but have now fallen out of favorer. These are the forgotten ones that have disappeared from the scene. A wonderful endangered cocktail to discover is one that is mentioned in a novel or historical account. Sometimes the search for the ingredients can be an adventure on its own.
The ultimate goal of SPEC is to list every cocktail with the date when it was last recorded as being served at a Cocktail Party or SPEC Certified bar. A Cocktail that has been served within the past ten years is considered to be viable. Cocktails that have not been served for more than ten years are endangered. And cocktails which have not been served for 50 years are extinct. They are extinct because it is likely that no living soul can distinctly remember the pleasure of their taste. However; even these are sometimes rediscovered and brought back. Yes, even as there are birds, animals and fish once thought to be extinct that now thrive, so too a cocktail can regain its niche at the party.
For it has been said many a time, “That which is not drunk will soon be forgotten." The dedicated brothers and sister of the SPEC movement will forever strive to drink to remember and though it requires discipline and endurance we invite you to join us in this worthy battle.
